Sugar-free Cookie Dough Fudge

There's nothing quite like the taste sensation of sweet, rich chocolate chips and soft, fudgy cookie dough. I'm definitely someone who would prefer to eat the dough straight from the bowl rather than bake it first - because I'm extremely impatient and the flavour is just insanely good. I'm not sure if it's the delicious richness of it or the sticky sweetness, but I can devour the entire bowl with no problem! The only qualm I have is when the sugar leaves a gluggy film in my mouth, but luckily I have found the answer!

Not only is it the perfect way to reduce the amount of sugar that goes into your sweet treats, but it's also made with all-natural stevia and there are four different options. In this recipe, I have used the Sweet Granules to get the delicious saccharine taste of freshly made cookie dough, along with sugar-free vegan chocolate chips. This means that this fudge is practically sugar-free and full of incredible healthy fats! It truly tastes wonderful and I love that it has none of the nasties that other artificial sweeteners found on supermarket shelves are packed with.

The full WHOLE EARTH Sweetener Co. range includes:

  • Baking Blend (500g) – A blend of raw cane sugar and stevia. This product bakes and browns just like sugar with 50% less calories than traditional sugar. ½ cup Baking Blend sweetens like 1 cup sugar.

  • Raw Cane 50 (160g) – Individually packed sugar sticks with 50% less calories than regular sugar. A blend of raw cane sugar and stevia. 1 stick is equivalent in sweetness to 1 teaspoon of raw sugar.

  • Sweet Granules (250g) -  A custom blend of stevia and erythritol with 97% less calories than regular sugar. ½ teaspoon Sweet Granules sweetens like 1 tsp sugar.

INGREDIENTS

  • 1 1/2 cups of oats
  • 1/2 cup of almond meal or ground flaxseed
  • 1/4 cup of WHOLE EARTH Sweetener Co. Sweet Granules
  • 1 cup of cashew and coconut butter or nut butter of choice
  • 1/2 cup of dairy-free milk
  • 1 teaspoon of vanilla bean paste or extract
  • 1/2 cup of dairy-free chocolate chips or your favourite dairy-free chocolate bar chopped into chunks

METHOD

  1. In a food processor whizz together the oats, almond meal/ground flaxseed and the Sweet Granules until well combined and finely ground.

  2. Next, add in the coconut and cashew butter, dairy-free milk, and vanilla bean paste/extract and whizz again until a soft, sticky but malleable dough forms. It helps to pour the milk in slowly to gradually incorporate it.

  3. Scoop the fudge mixture into a large mixing bowl and stir in the chocolate chips, ensuring that they are evenly dispersed throughout the mixture.

  4. Line a loaf tin or square brownie pan with parchment paper and scoop the fudge mixture in.

  5. Press the fudge mixture down with the back of a spoon until the top is flat and even.

  6. Cover and place in the refrigerator for 1-2 hours to set.

  7. Once hardened, cut into squares, store in an airtight container, and enjoy!
