Rose Coconut Ice + Rose Latté

'What can I eat?' seems like a question simple enough to answer, but it's not as simple as you'd think when you have no power. I'm on day 2 of no electricity in my house which means no fridge, no freezer, no oven, no hot water, and importantly, no blender. I basically live off smoothies, stir-fries, tea and noodles! Panic mode! Hence, today's nutritionally void menu has consisted of two large soy lattes from McDonalds (I came to use wi-fi and stayed for the delicious coffee) and this rosy delight.

At first you may be confused - roses, coconut ice and donuts? I promise it's every bit childhood candy goodness and none of the old, stale perfume-y harshness of potpourri. With just seven ingredients, one bowl, one spoon and 3 minutes to make it, it's the perfect sweet treat with no nasty colours (despite what the vibrant pink may suggest). To make the donuts perfectly shaped you will need a donut pan, however in the past I have made them by hand and it works well too!

I like to make a warm version of the Rose Latté by putting all the ingredients in my Nespresso Aeroccino3 and frothing until warm, fluffy perfection - you could also heat on a saucepan on low heat and add a tablespoon of coconut butter for the ultimate decadent drink! It's a yummy alternative to coffee without the caffeine, and to tea if you'd like something creamier and more satisfying.

INGREDIENTS

ROSE LAYER
50g of desiccated coconut
20g of brown rice syrup
1/2 teaspoon of Nutra Organics Velvet Latte powder or any similar product e.g. dragonfruit powder, freeze dried beetroot powder
2 teaspoons of rose water

VANILLA COCONUT LAYER
50g of desiccated coconut
20g of brown rice syrup
1 teaspoon of soy, rice or almond milk
Splash of vanilla extract
Pinch of sea salt

ROSE LATTÉ
1/2 cup of coconut milk
1/2 cup of rice milk
1 teaspoon of maple syrup
1 teaspoon of Nutra Organics Velvet Latte powder
1 teaspoon of rose water
Dash of vanilla extract

METHOD

  1. In a small bowl make the rose layer by adding in desiccated coconut, brown rice syrup, Nutra Organics Velvet Latte powder, and rose water. Stir vigorously and well to combine thoroughly.
  2. In another small bowl make the vanilla coconut layer by adding in desiccated coconut, brown rice syrup, plant milk of choice, vanilla extract and sea salt. Stir vigorously and well to combine thoroughly.
  3. Take a donut pan and press the mixture in however you wish - I layered it with vanilla, then rose, then more vanilla for a lovely swirl effect.
  4. Pry the edges away from the pan edges and tap out onto a plate. Dust with additional Nutra Organics Velvet Latte powder and decorate with dried rose buds if you wish.
  5. Make the rose latté by placing the coconut milk, rice milk, maple syrup, Nutra Organics Velvet Latte powder, rose water and vanilla in a jar. Shake until frothy and well combined, and serve over ice.
  6. Enjoy!
